1. Stuffed Pork Loin

Pork might be on the dry side when it comes to meats, but this recipe in particular makes for a nice holiday dish!

Ingredients:

  • 5-6 pounds of boneless pork loin roast (butterflied)
  • Salt and pepper to taste (the more meat, the more salt and pepper)
  • 3 cups of bread stuffing (already made)
  • Caul fat
  • 1 sliced onion (for flavor during the roast)

Roasting Instructions:

  • Preheat oven to 450 degrees. Then, roast pork for 15 minutes.
  • Then, reduce heat to 325 degrees F and let pork cook for about 90 minutes or until an internal temperature of 140 degrees.

2. White Lasagna

Lasagna is a hearty dish that’s very affordable and very easy to put together. Rather than your traditional red-sauce lasagna, this white-sauce alternative is perfectly fit for a holiday meal. The list of ingredients is a bit long, but chances are, you may have a lot of these items in your kitchen already.

Ingredients:

  • 8 ounces of lasagna noodles
  • 1 pound of ground beef (optional)
  • 1 cup of finely chopped celery
  • 3/4 of a cup of chopped onion
  • 1 garlic
  • 2 teaspoons of basil
  • 1 teaspoon of oregano
  • 3/4 teaspoon of salt
  • 1 cup of light cream
  • 1/2 a cup of dry white wine
  • 3 ounces of cream cheese
  • 2 cups of cheddar cheese
  • 1 and a half cups of gouda cheese
  • 1 16oz carton of cream-style cottage cheese
  • 12 slices of mozzarella cheese
  • 1 egg (slightly beaten)

Cooking Instructions:

  • Preheat oven to 375 degrees.
  • Brown beef in mixture of celery, onion, garlic and a tablespoon of olive oil. Then drain.
  • Stir in your seasonings.
  • Add cream and cream cheese
  • Cook over low heat for a few minutes until you get a smooth consistency.
  • Add wine, shredded cheddar and gouda.
  • Stir in the egg and cottage cheese. Then set aside.
  • Layer cooked noodles, meat, mixture, cottage cheese, mozzarella and repeat.
  • Bake for on top rack for 40 minutes.

3. Porchetta

Porchetta is an Italian favorite that’s sure to make mouths water at the Christmas party. It’s an affordable dish that’ll keep your guests coming back for seconds.

Ingredients:

  • 1 handful of fresh rosemary (finely chopped)
  • 1 handful of fresh sage (finely chopped)
  • 20 garlic cloves (thinly sliced)
  • 1 tablespoon of crushed red pepper flakes
  • Extra-virgin olive oil
  • 1 picnic shoulder of pork w/skin (bone removed)
  • Kosher salt and ground pepper

Cooking Instructions:

  • Preheat oven to 450 degrees.
  • Mix rosemary, sage, garlic and crushed red pepper with enough olive oil to make a loose paste. Gently cut the sides of the pork until it lies flat. Rub the oil mixture all throughout the inside of the pork shoulder. Add salt and pepper (generously). Roll back the pork and tie tightly with butcher's twine.
  • Brush the skin of the pork with chicken stock and roast for a little over 3 hours.
  • Casting the skin occasionally to keep moist.
  • If the skin gets too dark, cover with aluminum foil and remove for the last 30 minutes of cooking time.
  • Remove pork from oven and remove the string. Let it rest for 15 minutes.
  • Enjoy!
